Fit Fathers -- Vegan Sloppy JoesFor those who have given up animal products altogether or simply want to celebrate Meatless Monday without sacrificing the good, hardy taste of a traditional Sloppy Joe, Fit Fathers has your solution! In fact, this recipe is so delicious that an entire Super Bowl party of omnivores and carnivores chose this sandwich over the wings and blue cheese. It’s amazing what a few lentils and chunky tomato sauce will do to your taste buds!

Serves: 8

The Formula: 2 tablespoons olive oil; 1 ½ cups coarsely chopped mushrooms; ½ cup chopped onions; ½ cup diced celery; 1 minced garlic clove; 1 cup cooked French Green Lentils; 2 cups crushed tomatoes or chunky tomato sauce; 2 tablespoons tamari; 2 teaspoons vegan Worcestershire sauce; 1 teaspoon balsamic vinegar; ½ teaspoon Dijon mustard; ½ teaspoon chipotle powder; 1/8 teaspoon ground cinnamon; 8 whole grain sandwich buns; veganaise, pickles and vegan shredded cheese.

In a large skillet heat olive oil lightly with the mushrooms, onions, and celery. Sauté for 8 minutes and then add garlic and cook for another 2 minutes.

Fold in the lentils, tomatoes or tomato sauce, tamari, Worcestershire, vinegar, mustard, chipotle powder, and cinnamon.  Reduce heat, cover, and simmer for 25 minutes.  Serve warm on top of toasted and veganaise layered buns with 2 pickles and sprinkles of the cheese.
